If you want to prepare a genuine and simple, but very tasty breakfast, this recipe is absolutely perfect, ready in a few minutes.
Portions: 16 pancakes
Ingredients:
- 150 g whole wheat flour
- 70 g type 2 flour
- 240g milk
- 2 eggs (large)
- 30 g peanut oil
- 20 g organic acacia honey
- 8 g baking powder
- 1 pinch of salt
- fresh fruit – Kiwis
- organic acacia honey (for the top)
Break the eggs into a bowl then add the honey, a pinch of salt, the oil and the milk. Beat lightly with a hand whisk. Combine the wholemeal flour and the type 2 flour together with the baking powder, then mix vigorously to mix the ingredients and to dissolve any lumps.
Let the batter rest in a cool place for about 15 minutes. Heat a flat-bottomed pan (or one specifically for pancakes) after having lightly greased it with oil. Pour three or four dollops of batter well spaced. The batter will expand forming the various pancakes. Keep the flame medium so they don’t burn. When bubbles appear on the surface of the pancakes, we can turn them over with the help of a spatula. When they have become golden on the other side as well, transfer them to a plate.
Proceed with making other pancakes. Once the batter is finished, we can serve the wholemeal pancakes still warm by decorating them with organic acacia honey, sliced kiwi, or other fresh fruit to taste.
