It is so superb that it cannot be used as a sweetener. Besides, it would bring no sweetness to anyone. To the eye it is a riot of haughtiness: yellow leaves it to shy honeys, who are afraid of not being recognized by the majority. Burnt earth, brown, with regal reflections of amber, are some of the colors with which it is cloaked. The nose is decisive – almost wooden like the trunks of the trees from which it is born and already announces what it has to say in the mouth. Persistent in the bitter and astringent: its taste persists strongly with warm notes of caramel. It can be combined with ricotta, aged cheese.
